So we went with tacos last night, but I decided to add a bit of 'newness.' That involved making a big batch of shrimp ceviche first. Then cooked up a batch of ground beef with onions, garlic, jalapenos & spices. The final result was a flour tortilla filled with a layer of the beef, a heaping of the ceviche, some cheese & cilantro and finally, salsa. They were delicious! Of course, I also ate some of the ceviche on tortilla chips before devouring four of the tacos. Everything was delicious!
Some of the basic ingredients for the ceviche. Missing were garlic cloves, black olives, Worcestershire sauce, hot sauce & more tomatoes. Some folks like to add cucumbers, but I don't like them. Ingredient list & directions available; just ask.
