Had a little 3# one-rib roast in the fridge, so fixed it for dinner for me and the girls last night. Probably could have made ribeyes out of it, but this was more fun. They like theirs more done, and I am a sucker for rare. Just the perfect amount for me.

Wow, looks great! That's exactly what I did with one another I just got. While you can still get them for $5/lb. :)
 
I used to cook an entire prime rib for our company Christmas party. One of the few things I miss since retiring These pictures look great!

It's what is for dinner for Christmas every year I smoke ours two 12 pound roasts to do. The Treggar will get a work out tommorow
