Western Omelette, Jalapeño Cheddar Grits, and Hatch Cornbread

Sweet Tooth requested an omelette and toast for each of them this morning, so off to the stove I went.

Ham, cheese, and mushroom for them which is simple. Had a bunch of leftover veggies for mine, so a nice Western omelette with ham/cheese/onions/mushrooms/jalepenos/green onion toppers for mine. Fixed up some jalapeño cheddar cheese grits, to simmer while doing theirs. I was smart enough to save several individual pieces of my last Hatch Chile cornbread in the freezer too!!!

You add some asparagus to that omelet and it would be perfect.
