In addition to preparing the three salads for last night, I smoked 12 lbs. of country-style ribs & 8 lbs. of beef short ribs for two hours at 200 deg. Today, I'll finish them off using both the reg. oven & a crock pot. Some will get a BBQ sauce treatment while others will cook in a custom concoction of tomato sauces. Then it's into the freezer in meal-sized packs.
