Butchers That Do Summer Sausage in NM?

I can't find anyone local to Socorro that can do summer sausage with our game meat. Does anyone have a favorite butcher in ABQ, TorC or in between? I guess Cruces is an option too.

Don't know if they do sausage, but been very impressed with the quality by Eagle Rock Meats ABQ on 12th just south of I-40, might check with them. Carl

I think Green Valley on 4th Street in ABQ does summer sausage.

Eagle Rock is my go to processor. But they only do green chile, Italian and breakfast sausage. No summer sausage. I have had Green Valley Meats turn some of my ground deer into summer sausage and it was pretty good.

Green Valley Meats in Alb does mine and it is always good.

Do your own. We started doing ours this year and it is wonderful. Did not cost much to get started and my wife and I enjoy doing it.
