anyone have a heads up on how to do this? santa is bringing the wife a pressure cooker,,,,, i've heard quite a few of the utah people talk about how good it is and we'd like to try some

Oh ya my mom used to bottle whitetail venison that id bring back home, my mouth is starting to water, she would make the best mexican food with that bottled meat id ever had.
But I shoulda payed more attention cause I have no idea
how to use a pressure cooker. sorry!
 
Muleystopper try buying a preasure cooker and reading the instructions. They are really easy to use but on the same hand they can kill ya if you don't pay attention.

its a piece of cake. fill your VERY CLEAN pint jars with cubed meat...as full as you can get it, but about an inch from the top. pack it tight. put about a teaspoon of salt in with it. put the lids in boiling water, then put them on tight with the rings. put the jars in the pressure cooker, fill half way up with water. put the lid on. once you get it going (steam coming out the top) put the rattler thing on top (pressure regulator) put it on the 10 mark. rattle it for about 90 minutes then turn off the heat and let it cool all the way before you open it. this could be the most important step...must be cooled down before you open it or the jars won't seal.

the meat will be fully cooked, and can be stored for a long time. makes great meat for all sorts of different recipes. very delicious!

cool thats what i was hoping to hear tyvm what about the jars touching the sides/bottom of the cooker? need a rack? or is just sitting in the water ok?
 
hey not a problem. there should be some sort of rack/stand in the bottom of the pressure cooker. you don't want the jars sitting on the bottom of the cooker, and there should be a little space between the jars, and between the jars and the sides of the pressure cooker.

This sounds very interesting. I would like to here some of the recipes you cook with the canned meat.
 
there are a lot of different ways I use the canned meat. One way is to use it for a simple but really quick soup. just put a can of meat, a can of stewed tomatoes (i also used home canned tomatoes) then just a mix of whatever other vegetables you have, (frozen usually) sometimes corn, green beans, maybe some onion, basically any type of vegetable that you like. I'll usually add some water and then let it come to a boil, then thats about it. also, add some pepper and maybe a dash of salt.

another thing i like to do is make sort of a beef stroganoff type dish. its ridiculously simple. one jar of canned meat, one can of cream of mushroom soup, cook until hot. sometimes i'll add some onion to this, if you do you'll need to cook it a bit longer to soften up the onions. i'll serve this over some of those wide egg noodles.

when you can meat there will be some liquid in the jar. i usually put the liquid right in to the dish. it adds a ton of flavor. for a milder taste you can leave it out.

aother way i cook with it is to melt some butter in a pan, then just fry the pieces of meat up in the butter. its already cooked when you can it so its not to cook the meat. it just adds a different flavor to it, and is just another way to eat it. sometimes i'll fry up some potatoes and onions to go with it.

these are just a couple ways i cook with it. when i think of some more ways i've used it ill post some more.
