need smoking tips

I have a gas smoker and i could us some tips on smoking meat from you guys.

Do I always use the pan of water when smoking
Do you soak you chips in water??
I am trying to smoke fish at 160 and jerky at 170 and its kida hard to get alot of smoke.

What temps do you smoke at??

No single 'right' way to do it, that's for sure!!!! ;)

Quick answers from me:

No, I do not always use a pan of water. In fact, I rarely do, especially with jerkey.

Yes, I soak the chips in water.

I generally look for lower temps than you've mentioned. I generally smoke my jerkey at around 140. Salmon, just a bit warmer. Long & slow..... ;)

I use my water pan. I once didnt do that and had a bit of grease built up and I ended up with a fire in there that burnt my tri-tips. :(

I use bbq pellets sometimes--the hickory ones. I have both soaked and not soaked my other woods but generally do not.

I smoke at 250 or so when I am doing most meats, but would use less heat for jerky, etc.

Every smoker is different.

Any meat smoked is great.
