I know there is a forum dedicated to cooking and what not, but since this is the chile capitol of the world, I thought I'd share a couple recipes that I just used for my elk. They came out wicked good.
Spicy Breakfast Sausage
10 pounds elk/pork 70/30 mix. I ground the elk fine and the pork coarse. Mix well.
5 tbsp salt
1 tbsp ground white pepper
2 tbsp rubbed sage
1 tsp ginger
1 tbsp nutmeg (trust me on this!)
1 tbsp thyme
1 pint cold water
Chile- 1 tbsp mild-2 medium-3 hot Use your favorite chile powder, cayenne, whatever.
1 tbsp garlic powder
1 tsp chioptle powder (optional)
mix all ingredients in bowl, work into sausage a little bit at a time while adding water. Stuff into casings or package.

4 tbsp dry parsley flakes
6 tbsp brown sugar
1 cold beer
mix and enjoy!!
