Ate mine and I recommend two things.
Don't hunt them right after they come out of hiberneation. Instead of urinating all winter, they store it up in their body, so right after hibernation they taste like urine! Brother killed one like that one time, NASTY!
The one I got in June had fattened up and was good eating. BUT, as stated, only eat bear that is cooked WELL DONE. Just like pork that can have trich, cooking kills it.
