No I would let it go until 4th of July and then mix in some BBQ sauce for "sloppy Joes". Make sure that you give them a napkin with the business card of the doctor that treated you with the addage "Mention BUCKSNORT with this ad, to recieve a complimentary bonus slap to the back of the head".

BS, do a test. If you can cut it with a knife.....it's not done.
When it looks like a piece of charcoal, it might be done.

That's the thing about bear meat, you're never really sure if it's done or not. Good luck.

My mom told me that the trick to cooking bear meat is to soak the meat in LEMON JUICE for 24 hours and then cook it and no problems. Guess my Granny use to cook it because my Gramps use to hunt bear.
