Wanted to ramp it up a bit tonight. Grocer is making a new southwest blend of fresh tortillas (chipotle/cumin/spice/paprika). Fried up thin slices of hot Andouille sausage, mushrooms, bell and jalapeño peppers. Fried some colored fingerling potatoes, with cajun seasoning for a side. Sweet onions, cilantro, hot sauce, sour cream. First one was a little bland, so coated the second with Cotija cheese also!! WOW.....
