Creole Shrimp and Imitation Boudin (Bison Chorizo)

A friend gave me some Montana bison he had done into chorizo. Really disappointing with so much rice/bran filler and not a lot of spice, but it was almost a perfect match for a good Louisiana pork boudin!! In that case, we will just whip up some creole shrimp, and make a two-fer taco!!! Oh Wow!!

When you wrote Boudin, I immediately thought black boudin or blood sausage ?. Which I have tried. (only once). This meal looks great.

Never heard of rice filler with chorizo. Sounds not so good!?
Normally I use chorizo not in the casing for breakfast with eggs or to mix with my ground elk for delicious burgers. In the casing I prefer linguica as it has more flavor.
 
Yeah, it was a real surprise to the two of us also. This is the way we are used to doing chorizo and mixing in my eggs or quiche!!
