I'M AN ARIZONA RESIDENT AND ITS BEEN 8 YEARS SINCE MY LAST ELK.. SO I'M A LITTLE RUSTY SINCE MY LAST BATCH WAS 8 YRS AGO.
(PROBABLY GONNA BE 16YRS BEFORE I GET MY NEXT ONE,, THANKS A (*&^$$ LOT GEORGIE)

I'M LOOKING FOR ANY SUGGESTIONS ON RECIPIES ON PREPARING THE MEAT STRIPS BEFORE THEY GO ON THE DEHYDRATOR...
ANY OF YOUR FAVORITE RECIPIES WOULD BE GREATLY APPRCIATED

Here is a recipe that I have used several times that has become a favorite here at work.

1 cup Soy sauce
1 cup Worcestershire Sauce
1 tbl Ketchup
1 tsp onion salt
1 tsp Garlic salt
2 tsp liquid smoke
Coarse Balk Pepper to liking

Mix everything together in a large bowl. Let the meat soak in the sauce over night (12 hours) string occasionally. Lay the meat out flat on the Dehydrator and cook the meat for about 6 hours at 140 F or until the meat is dry but not crispy.

This recipe will work for about two lbs of thinly (1/8 inch) sliced meat. Make sure that you have enough sauce to submerge your meat while it is soaking.
