So I come home from work and my wife is making BLT's. I was in the mood for some nice fresh venison. I ask myself how do I want to cook some chops. I say self, I bet throwing them in that frying pan with the bacon greese would be good. Let me tell you all I did was put some Montreal steak seasoning on them threw them in the pan and they were the best chops I have ever eaten. If you havn't tried this I would suggest that you do.

I tried it myself, but in a slight variation. You start by firing up the BBQ grill to let it heat up, then fry up the bacon on the stove, but take it out of the pan before it gets crisp. Turn off the stove and remove the pan to let the bacon grease cool. Now, wrap the bacon around a game chop and pin it with a toothpick. Sprinkle your seasoning mix, then dip it in the cooling bacon grease. You can let the grease soak in a little, then throw them on the BBQ grill. Be sure to leave a hint of pink in the center and eat 'em while they're hot. Antelope is great this way, Deer is better, and Elk is simply heavenly.
 
I love to cook with bacon grease... My gut shows it too. :)

I save the grease when I cook bacon, just pour it in an old coffee cup and set it on the self with the other spices, that way I always hava little dab if I need it.

What I do is dredge (coat with flour) steaks, sprinkle with salt and pepper, then fry them in bacon grease and a tad bit of vetable oil. It doesn't take much of either. Then you can make gravey from the drippings and put over some mashed patatoes... Its an absolute gut bomb and my favorite meal!

Bacon grease rocks!
