What would the iconic or quintessential animal be from each state for you? My dream hunt list would be:

Alaska- Caribou
Arizona- Cougar
California- Blacktail deer
Colorado- Mule deer
Idaho- Mountain goat
Montana- Bison
Nevada- Desert Bighorn sheep
New Mexico- Rocky Mtn Elk
Oregon- California Bighorn sheep
Utah- Shiras Moose
Washington- Roosevelt Elk
Wyoming- Pronghorn

YBO is spot on, in Calif it would have to be Tule Elk though most will never draw to hunt them in a lifetime of trying. Money can buy a hunt though. Some of the varied hunts are in rough Blacktail like habitat that might be steep but a joy to hunt.
