YES they are BUT, there's a big but, you have to take extra precautions when cleaning them. They have some glands in weird places on the outside and if you get that on the meat or get it on you and then touch the meat, it will be awful.
SO - take your dead javelina, hang it upside down put on a pair of nitrile gloves. Skin it from the back hooves down to the neck and cut off the hide. Take the hide and put it in a trash bag and then take the gloves you were wearing and put them in there also.
Next wash up and put some new gloves on, then quarter and debone the meat. It will come out just like a more tender wild pork. I have served it BBQ'd and also made awesome Posole with it and everyone who tried it did not believe it was Javelina.
They are called stink pigs for a reason, keep the stink and the meat separate and you will enjoy it!
