I have encountered a white, sack-like substance while butchering a mature mule deer doe. The "sack" is within the muscle tissue, fairly deep. I have butchered many deer and have never encountered this before. The doe was killed Sunday and has been kept cool(refrigerated) through today.
 
I have emailed a pic that will hopefully get posted shortly, for some reason I cannot post it, although I have never had trouble in the past. The diameter of the "sack" small, 1/16". Double-lunger, complete pass-through, quartered on site and in game bags within 30 minutes. Temps were cool, around 30.
 
Looked at the pic, nothing I would worry about. BTW, from your initial description, I was thinking maybe a bullet, but obviously not yours or something recent. haha.... Eat well.
