Need a good recipe for elk roast

Title says it all. Never done an elk roast. What's some good recipes for a juicy flavorful elk roast?

I do a slow cooker pot roast that I like.

2-3 lb venison roast, trimmed of fat, silver skin, gristle
2 lb diced potatoes
2 lb baby carrots
2-3 cans beef broth
1 small onion, sliced
1 lb celery cut into chunks
1 pkg McCormicks slow cooker savory pot roast seasoning mix
salt
pepper

Throw it all in the crock pot and cook it for 6-8 hours.

Browning the roast in a skillet to begin with may be a good thing but I usually don't do that.

I think my slow cooker is a 6 quart, if you have a 4 quart one you will have to cut the quantities down.

I usually do 1 teaspoon of salt per pound of vegetables, and 1 teaspoon of pepper for the whole thing.

New red skinned potatoes don't have to be pealed. If you have russet potatoes you will have to peal them.
 
I advise all hunter to invest in a pressure cooker. I cook almost all of my wild game roasts in my pressure cooker. Especially if they are a big animal.

If they are hind quarter roasts cook them hot and quick. 125 internal temperature, delicious. Front quarter slowed cooked is the best, love a good crockpot curry
