I drew a NM. Oryx Hunt for January, just wondering if any of you have gotten one and how you have prepared it.

I like to cut the meat into golf ball sized chunks and wrap with green chili and bacon.use toothpicks to hold it together normally three per chunk.Then you will want grill on non direct heat constantly flipping until bacon is crispy.Good luck if you need a good guide i would recommend 505 Outfitters.I used them on my oil tag and glad i did Pete Vigil runs a great Outfitt!

Oryx meat is much better than elk IMO..... And I love elk

had some oryx during an africa hunt. it was excellent although i'm pretty sure the multiple african lagers didnt hurt.
