I have never boned out a deer before. Does anyone know where I could get imformation how to do the job the right way.

Gutless is the only way to go in my opinion. Keeps the mess to a minimum and you are left with a bunch of clean meat to pack. Link below shows how. As far as the deboning goes, it's not hard to figure out. Just work the meat off the bone. After a couple times you will notice which seems to work.

Only one way to learn.
Use a fairly limber knife, fillet knife works good or any other long slender straight blade will do.
What you basically want to do is remove the meat from the bones in the largest pieces possible. You do this by inserting the knife point to the bone and following the bone, cut the muscle from the bone.
Try it it is not that difficult.
