Prime Whole Sirloin, Scalloped Potatoes, and Caesar Salad

Great price at Sam's Club, so I got one. Aged and seasoned for 24 hours in the fridge. Working in the shop all day today where the ovens are, so could keep an eye on them. 30 Minutes at 425, then 3 hours at 220 resulted in an internal temp of 128. Idaho scalloped potatoes and a nice Caesar salad.

Kept half of it to slice thin with my meat slicer for French Dips, or Philly cheesesteak too!!

Mind saying what meat slicer you have and what you think of it. Had one for years that I thought was just ok. It died over a year ago and I am trying to replace it. The few I have tried seemed flimsy and a lot of work to clean.

Sorry, it's an old antique RIVAL. OutdoorWriter and I commented on them in another thread. When it finally gives up, I will probably go with a nice LEM

 
Thanks. That one looks like the one I had. Very simple, and easy to clean. Wish the table would of been more stable, but got the job done.
