Delicious spicy Cajun jambalaya, even without using seafood. Stick to your ribs good, and I have lunches for several days!!

Easy and Fast Jambalaya
Ingredients

  • 8 ounce box Zatarain's Jambalaya
  • 2 cups chicken broth
  • 14 ounces Andouille, or smoked sausage undrained
  • 1 can chicken breast meat
  • 6 slices bacon
  • 10 ounce can Rotel (any flavor you like)
  • 1 green bell pepper chopped ( I substituted jalepenos)
  • 1 diced sweet onion
Instructions
Add chicken broth, box of Zatarain's and can of Rotel with juices to a stock pot and stir.

Begin to heat, while prepping other ingredients.

Chop the bacon into pieces and brown, drain (can microwave in paper towel if desired)

Open can of chicken, drain liquid

Chop green pepper, onion, and slice sausage into coins. Add to pot and stir.

Bring mixture to a boil over medium-high heat and then turn down to low, cover and simmer for 25-30 minutes or until rice is tender.

Salt and pepper to taste, great with hot sauces and crackers
