Lots of people told me swan was no good. Here is the first recipe I cam up with to try it. Cut swan up in bite-size pieces and soak for 24 hours in pineapple juice and sesame teriyaki mixed about 1:1 ratio. Put on bamboo kabab sticks mixed with fresh pineapple and red bell pepper pieces. I put them in the oven, top shelf on broil in a glass baking dish. Turn them over after 2-3 minutes. Cook additional 2-3 minutes then drizzle teriyaki over them and cook a couple more minutes. Very tasty.

Looks good, nice on the marinade. Is swan more like sandhill, or goose. I enjoy SH, but goose is a little too much for me. Only use them for jerky.
