After moving to Wyoming and trying a couple different meat shops we got sick of spending $600-$1000 every year for a halfway decent job on our meats so we decided to spend that money on all the equipment and do it all our selves. Between the 2 of us we usually end up with around 5 or 6 animals a year so we've just been breaking them down and putting them in the freezer until the middle of winter when nothing is going on to finish cutting up. This year we sucked and only had 1 elk and 1 whitetail to deal with. This set of days off we decided to do some burger 80%elk 20% bacon, general cooking burger 80% elk 20% pork did this with the whitetail also (use this mix for summer sausage and sticks), and breakfast sausage 50%elk 50% pork. We also did a 10lb batch of honey bbq jerky and another 10lb batch of mandarin teriyaki snack sticks. Not sure why but it makes these hunts that much better processing and being able to make some of this stuff. Ps the dog didn't quite make the cut to be part of the table-fare .
