Evanston, Wyoming is probably the better of the town's that are close. They have more choices for hotels and food. Although I do enjoy a hamburger from Gator's in Randolph.

On your question if you gun cases is considered oversize..If your under 50lbs then no...I flew to Texas with 2 rifles and mine was like 55lbs so I ended up paying like $25 bucks. I flew Delta.

If your hunting in Utah you can only use a 1x scope so the combo wouldn't be best. I just bought the Vortek Ultralight LDR. So far so good. Only shot it a few times though.
