...archives -- fish & chips. Cod dipped in my custom batter, crispy fries & a small ear of corn.

This is my basic recipe. I sometimes throw in a different herb or spice such as paprika, thyme, Creole seasoning, etc. The Huy Fong sauce gives it a kick, so be careful if you don't like hot.

Two cups of white flour
3 tbsp. baking soda or corn starch
2 eggs
2 tbsp. yellow mustard
2 tbsp. Old Bay seasoning
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. black pepper
1 tbsp. Huy Fong Chile Garlic Sauce

You want the consistency of pancake batter. If it's too thick, add a bit of water. Too thin, add flour.
