I have heard more than once from old timers, any antelope that just ran a marathon before harvest will taste like crap??
 
Antelope is my personal favorite, but I’ve never had moose or axis. I’ve been told that axis is fantastic.
I cherish my antelope meat & rarely share much of it. Lol
 
This was mixed with beef suet. Would the shoulders or hams taste different than the loin? Have never had this experience with muleys, WT or elk. However, this is the first antelope I've had so wondering.
Yes, sort of.
The shoulders and neck have a different flavor to me and are best ground.
Good tender cuts of rump are for steak or jerky meat and a roast or two and all the good clean trimmings from them go into the grind bag with the shoulder/neck meat.
I'd say that about 70% of our grind meat is shoulder/neck and the rest comes from other chunks and trimmings from the other parts of the critter.
