Stripped all the meat off the ribs, smashed the Mayacoba beans into refried, both cheddar and Cotija cheese, extra sweet onions, and that Expo salsa again!! Wow!!!

The Expo salsa I found was the "All Around Salsa". Didn't find the H&H brand that everyone else was talking about. I mixed mine with a 10.5 oz can of Ro-Tel with diced tomatoes and diced chiles (started with mild, so I could tell the heat level of the mix). It was really good. It gets even better after several days, as all the ingredients get time to really soak and soften, releasing more flavor.
