I shoot a hoyt v-tech set at 60 pounds. The bow is nothing to draw but its comfortable and I can hold it forever. Would i be able to notice the extra speed if I cranked it 5 or 10 pounds or should I just leave it the way it is?
 
Yes you would notice a difference in speed,but you might have to go to a stiffer/heavier arrow which might not gain you much in the long run. With the right arrow 60 lbs will kill anything with fur.

I'm currently shooting 61 lbs......complete pass-throughs are still the norm. If you're comfortable shooting that weight, it should work fine. Good luck and have fun.

Another advantage of cranking it up a bit is that bows perform better at or near their peak draw weight. If you can handle the extra weight, I say do it.

You will notice the incerease in speed at 40 yards and more. Your pin gaps in your sight will tighten up. With the same weight arrow, you may only gain 2-4 pounds of KE. If you don't have a chronograph use this site to estimate your arrow speed.

Then you can calculate your Kinetic energy, just knowing your speed and arrow weight

All in all, remember, a slow hit is better than a fast miss.
