After working in the yard all day I came inside and remembered I had thawed a package of homemade elk linguica yesterday. Decided to butterfly them and cooked them in a pan along with some diced onions. Threw one on some toasted bread with sriracha Mayo, mustard, pepper jack cheese and avacado. It didn’t disappoint!

Wow, that looks wonderful! My Aunt was native Brazilian and American Uncle and cousins all lived there in Rio and São Paulo. Heavy into Portuguese foods, and I love linguica. Another twist on it is to get the Greek version (laconico) over around Tarpon Springs in Florida. ++
