My recomendation is that you all take care of your own
wild game. contact a butcher shop and hang your skinned
deer or elk for 2-3 weeks, it will give you the most tender
and best tasting meat. Some shops may not recomend that you hang it for that long, but I have a walk in cooler and all of my
meat hangs for 21 days and then I cut it up myself. I give a
package of steak to all the ranchers that are nice enough to let
me hunt on thair land and the always comment that it's the
best wild meat that they have had, It takes some time, but the results are far better than any commercial shop will ever be able
to produce. Remember a commercial shop is in it for the $$$, the more they do the more they make. Besides, how do you know that
your getting back what you take in. My .02.
