Eating pretty lite tonight, and semi-healthy. Had to use up the last of my Texmati rice anyway, and finished the remaining elk tenderloin BBQ, with wasabi and seeds!!! Battered some orange chicken in sesame oil, stir fry frozen veggies, and fresh pineapple and strawberries, instead of salads. Came out pretty darn good!

GVH: I think most of the Internet recipes with un-cooked rice come out better, and much creamier.

Tonight I just winged it!!
2 cups cooked long grain rice. Can be either warm or cold.
2 cups whole milk (tonight I had to use half and half, just made it thicker)
4 tablespoons sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 cup raisins, or dried cranberries

In a saucepan, combine the rice, milk, sugar, cinnamon, salt, and raisins.
Cook the mixture, uncovered, over medium low heat until thickened, and stirring often, about 15-20 minutes.
Remove from the heat; stir in the vanilla.
Spoon into serving dishes; I got fancy and used little ramekins.
Serve warm. If desired, top with whipped cream, or ice cream
 
Hawk: Went down for a few days a week ago. Will go back down and take my UTV to cover more ground around Sept 8th. Then go for the entire hunt.
