Another one of those weird thoughts, while trying to go to sleep. What to do with that big ole ring sausage in the fridge? Had to be something the girls would eat also, and not too spicy!!!
Green and yellow squash, red and yellow bell pepper, carrots, and sliced jalapeño. Stripped out the sausage and browned first, finished the veggies on good high heat with some olive oil, and added the meat back in. Made a lemon garlic butter sauce for them, and the sweet chili sauce for me.
