Moose neck

decided to cook a chunk of moose neck, one of my favorite cuts. An Alaskan moose can have up to 50 lbs of meat around its neck. A common violation up here are non residents not taking the neck meat. It’s not required in a lot of states but it is here.

Put it in the instant pot with garlic beef bullion and some other seasonings. Left it on low all day.

I have no experience with Alaska moose at all. Our Shiras that would be tough as a tow strap!!!

Looks a lot like tender pot roast. Is it better braised or slow cooked, or just used as more burger??
