When we were at our reunion in Tenn last week, we all took turns cooking unique dinners. My friend from Pittsburg fishes Lake Erie for walleye all the time, and this is a specialty of his. Absolutely delicious, and I am definitely trying it with speckled trout and redfish!!! The walleye is a light flaky tender white meat. He cut in 1/2" cubes, sauteed it hot and quick, the folded it in gently at the end!!

I'm sure it would be great. I'm gonna try it with redfish first. That's pretty hearty and stays together in my tomato based cobullion or ettoufee.

Then I will try with bass, crappie, tilapia, etc
 
Walleye fishing in the lake is great Blank- the lake is about 15 miles north of me. Current population is one of the highest this year. They are really hammering them this year. Caught many over the years, but the lake erie perch is also to die for. My dad use to take us there about every weekend growing up and we caught bucket fulls back then.

Still fish it today- going out next week with a friend.
