Made Spanish paella on the Kamado Joe. Chicken thighs, Spanish chorizo and large Texas wild shrimp. Adding the lemon slices during the cook really gave it a nice flavor. Never cooked short grain bomba rice before, but I was able to resist the urge to stir it. The 14" paella pan fits the Classic size kamado perfectly and there was enough for at least 6 people. Can't wait to make it with scallops, mussels and clams!

Good **** there. I have been making paella for 20 years. Love it. I think I’m due for a batch myself.
