Inch thick center-cut pork chops, smashed Idaho russets, brown dripping gravy, fresh beans and tomatoes from the garden, and Hatch Chile cornbread. What are the poor folks having tonight???
That's why I cut 1-1 1/4" thick. Nice crust on either side, to get some body for the gravy. Stuck with thermometer and pull at 145 degrees, so they're still moist.
