Muzz please congradulate your wife. I have hunted this unit every year for the past 5 years. I buy a permit from the owner of the property.
The manager of the property (Greg Marble) is a great guy, and he will give you access to the whole ranch. You most likely will be hunting during the regular season, which is actually the best time, since a lot of animals get moved onto the property, from surrounding land.
As far as holding out for a 28" animal........I have never seen a 28" animal in the five years I have hunted. You will see a lot of deer, and my highest count of bucks is 40 in one day. Most of them are spikes and 2 points, but you will see enough 3 and 4 points to keep you interested.
Biggest key to this land is to get to a high point, and glass. THe country is real open, and the deer will stay real tight. YOu will see a lot more animals, if you use your optics, instead of your boots. A lot of the animals feed in the fields at night, but the big bucks are usually in there beds, by the time you can see to shoot.
