Well I just found me a new way to cook my wild game meat. I’m just discovering air fryers. I marinated a pronghorn backstrap in teriyaki, cranberry juice, and garlic. Damn it’s good.

I love the good ones, and don't think there's any better meat for fine grain and tenderness than an antelope backstrap. That said, a bad one cannot be tolerated, and sometimes even the dog won't eat it. Those get donated or just turned into pepperoni sticks, at the processor, and hope I get someone else's back!!!
 
Elk is my favorite game meat and then probably antelope. People here will argue with you that Oryx is the best but not for me.
