I wouldn't normally post a picture of an invited meal, but it was friggin' amazing! Our friends had us over and she did spicy seasoned chicken enchiladas w/ Hatch salsa, home made refried black beans, Spanish rice, and salad with house made Balsamic vinegrette. The seconds were as good as the first!!

And, at least in my case, it always tastes so much better when some else has made it!!! Looks great!
