The cap is the tenderest and most flavorable part of the sirloin. I love it when the girls don't want to eat all that "fatty part " of my ribeyes!! :)
 
Just the style like you get at one of those Brazilian buffets. Top sirloin cap roast Cooke on a skewer. Some have fancy sauces and such. I just used high man steak rub
