Fresh buck backstrap cleaned up and getting ready to go on the smoker, than reversed seared. Can’t wait.

We covered her up and let her age a little longer in the fridge. We decided to try spot an elk for my 13 year son tonight.

So near future on the BS.
 
I really enjoy stuffed loins and tenderloins. With venison being so lean, you have to be careful not to overcook. I'm a lover of all bleu cheeses, whether plain, Gorgonzola, or Roquefort and I love this recipe for lean meats

I gotta try that on half, I also love anything blue cheese. Looks great!
