Girls told me tonight that they were having the leftover steak and sides for dinner, and I might pull back a bloody stump, if I tried to take any. Since I had shrimp left, and hadn't made a home-made pie in a while, it was "Oven On".

Whipped up a quick no-yeast dough, made a blonde roux sauce with Parm, garlic and Italian seasoning. Fresh (tube) basil, Mozzarella/Parm/Cheddar cheeses, bacon bits from the steak last night, and lots of olive oil and red pepper flakes. Edible, to say the least!!!

My pizzas are always a spur of the moment thing, so I got used to making fast 10-15 minute dough, without yeast. Easy!

2 1/2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon sugar (optional-I like the taste and it browns a little better)
3/4 cup warm water (plus a little extra, if needed at the end)
2-3 squirts olive oil

Mix all the dry, add water and oil and mix well. Knead by hand a couple minutes, until it feels "right". If too wet and sticky, add a couple spoons flour. If still dry, add a couple spoons of water.

Flour the surface and roll out 12-14". I'm lazy and don't like cleanup, so I roll it out between sheets of parchment paper, and no flour needed
