The girls are gone for a week, doing GMa things, and I have no restraints. Hot-spicy-onions-seafood-game meat, the sky’s the limit!!

Sometimes you just have to let the Gin&Tonic decide what’s for dinner. Seven layer tortilla pie, with enchilada sauce, beans, taco meat, onions, cheese layered 3 deep. Tortillas top and bottom. Plenty of pico, lettuce, avocado, and hot sauce to dress it up!!! Should make awesome leftovers too.

We do Mexican food probably more than anything else. That looks fantastic. I’m going to show my wife this and have her make some. Thanks.

What temperature and for how long?
 
Because I cooked the hamburger for the taco meat, everything else was OK to eat as is. I did 350 degrees for 30 minutes in my cast iron pie pan, and it was perfect. I did char my torts before layering them into the skillet.

Was going to make enchiladas tonight but after seeing this I changed gears. 4” deep Corning Ware. Made the layers to thick and ended up with 4 layers. Afterwards realized I forgot to use the corn I had out. So it got fried in butter with garlic and black pepper. Wish I had another onion to of added to it.
