Stuffed Texas Sweet Onions

Girls had enough left-over pork for them, so cut me loose to eat on my own. Been staring at this big ole Texas onion for a week, wondering what to do with it. Tonight's the night!!
Cut it in half, and scooped out the inner rings. Had a little burger, and mixed with chopped onions, jalepenos, cheese, garlic, bacon bits, bread crumbs and an egg. Baked at 350 degrees for 45 minutes.
Last nights mustard sauce was great on it! Yeah baby!!!

That’s a great idea, I’ve never heard or thought of it. Vidalia onions will be available shortly, (my favorites along with Maui and Walla Walla), I will certainly try it out. Something new to try out.?
 
Looks great Blank. I made stuffed bell peppers the other day. They weren't so good I think tge peppers were getting soft and old and I didn't cook the rice well.
