Tex-Mex Breakfast Scramble

Got the wife packed up and on the road to Boise for a weekend of daughter and grand-daughter time. This could be expensive. Staying here with the MIL, guardian angel duty!!

Bacon, potatoes, fried fresh jalapeños, and a little sharp white cheddar to hold the eggs together. Moved it all to the side and fried a couple fresh tortillas in the left-over grease. Delicious!!!

It was lots of pico, and a little sour cream and avocado, after the picture. You guys down South get spoiled by having fresh ripe avocados. The best thing I have found is these little miniatures of avocado from Sam's; just plain pureed fruit. Great on tacos, and have about 3 month shelf life!!

Not pure avocado, but my wife buys already made guacamole that's pretty good. She gets it in Fry's here, which is Kroeger's.
