Since some of you guys do nothing but make me hungry with these posts, though I would add one. My Utah Ram from last year. Usually I make this with venison sauce, but I was out. Start and end of cooking.

How was the meat as far as tenderness?

The meat from my desert was about like an old boot, even though it was well cared for in the field and aged in a walk-in cooler.
 
Not to tough. As to be expected from deboning in the field and hauling out. But it was the second most gamey tasting critter I ever tipped over.

Yup. I forgot to mention the taste. Only thing worst I've had was a few bites of a Catalina goat.
