Backstrap wellington

Always wanted to try this, but was afraid to screw up such a prime cut. Wrapped in mushroom and shallot paste then proccuito. Store bought puff pastry. Pretty happy how it came out.

No sir. Mashed potatoes with store bought pork flavored gravy. There were so many steps in making the Wellington, I could deal with more.
