RELH: This was a complete and total lark and experiment. I don't know a lot about the science of baking things, so had no idea what Baileys and 17% alcohol would do in the mix. The MIL and I drink coffee, so we thought it was OK. The wife doesn't drink either coffee or Baileys, so she wasn't a big fan of the taste, but did like the sweetness.
1 cup AP flour
3/4 cup granulated sugar
2 teaspoons baking powder
Pinch of salt
1/2 stick butter
2 large eggs
1/4 cup Baileys Irish Cream
1/4 cup Vanilla Caramel coffee creamer
1/2 cup milk
3 tablespoons canola or vegetable oil
1tablespoon vanilla extract
1. Heat oven to 350 degrees.
2. Grease and flour a 8"x8" square or 8-9" round pan. Could line with non-stick foil to make removal easier.
3. Mix dry ingredients thoroughly
4. Melt butter and combine all wet ingredients, mixing well
5. Add wet to dry and continue mixing for one minute
6. Pour into baking pan. Cook 30 minutes at 350 until done, and a toothpick comes out clean.
Made the glaze out of 1 1/2 cups powdered sugar, and 2-3 tablespoons of the coffee creamer. Mix well. Drizzle over top.
