This was a mix of all the pork loin trim, stew meat, pork shoulder and Boston butt. Cut it up boneless, and done in the Insta-Pot for 35 minutes, then shredded by fork. Melt in your mouth tender.
I have two large ovens installed in my garage, where I can throw dishes and cook for hours without heating up the house. I love to put on a big 10# pork shoulder and slow-cook for 5-6 hours, then pull off the bone. When it goes on sale here, it is down around $1/lb. Doesn't get any cheaper, and freezes so well in vacuum pack.
